These burgers are deliciously fragrant, low fat and really filling, providing a healthy mid-week recipe that can be thrown together in less than 20 minutes. They can be served with salad or a toasted gluten free bun and dipped in sweet chilli, satay, or a spicy mayo sauce.

Ingredients (serves 2-3)
450g lean turkey mince
1 mild red chilli
1cm cubed fresh ginger
1 tbsp fish sauce
1 tsp brown sugar
2 garlic cloves
1/2 red onion
1 large carrot
Juice of half a lime
Handful of fresh coriander and parsley (don’t use dried it won’t work)
1 slice gluten free bread (I put the end piece that never gets eaten to good use here)
Pinch of salt and pepper
Rapeseed / low cal cooking oil
1. Finely chop your onion, garlic, chilli and ginger. Grate the carrot and blend the GF bread in a food processor.
2. Over medium heat sauté onions and garlic for a couple of minutes until soft, adding in the ginger and chilli at the end to release some of the fragrance.
3. Tip everything into a large mixing bowl, adding the GF breadcrumbs, turkey mince, fish sauce, lime juice, fresh herbs, sugar and seasoning. Mix together really well with your hands and form into burger patties about 1cm thick.
4. Heat the pan again with more oil and cook the burgers for 4-5minutes on each side, until light brown.
